Tomato Cups: The Perfect, Healthy Summer Food

Summer is here, which means lots of outdoor eating. Picnics, potlucks, parties, BBQ’s you name it….all a lot of fun, yet can lead to a lot of unhealthy eating.  Finding some alternatives that are fresh and healthy, as well as delicious, can help curb the cravings for foods that your body is better off without.  Our raw food tomato cups are a wonderful alternative to processed snacks and are easy to make. Whether you make them for yourself, or as an hors d’ oeuvre for a summer gathering….these healthy treats are sure to please

TOMATO CUPS   (makes 12)

6 Medium Tomatoes

½ Small Cucumber

2 Sticks Celery

2 Green Onions

½ Cup Fresh Parsley

1 Tbs. Fresh Mint

1 Clove Garlic

2 Tsp. Kelp

½ Cup Sunflower Seeds

1 Tbs. Lemon Juice

1 Tbs. Olive Oil (Optional)

Real Salt to Taste (Optional)

Cut tomatoes in half and scoop out center. Add tomato pulp to the other ingredients. Finely chop all

ingredients, mix well and fill tomatoes halves, great for a side dish.  For a small side, or finger food, use cherry or small tomatoes.
