Recipe of the Week: Our Favorite Kale Salad

Kale has become the darling of the “greens” world in the past few years.  It is no small wonder why, as it is one of the most nutrient dense foods available.  Kale is a cruciferous vegetable that is packed with Vitamins A, K, B, and C as well as magnesium, potassium, copper, calcium, and manganese.

One of our favorite ways to prepare kale is in a fresh, summer-perfect salad.  This salad is simple to make and includes other delicious and beneficial ingredients such as lycopene rich tomatoes, allicin filled garlic, and pine nuts which are a great source of iron.  Our wonderful kale salad is a veritable bowl of health!


1 Large Bunch Kale Finely Chopped

2 Cups Carrot Shredded

1 Pint of Grape Tomatoes

½ Cup Soaked Pine Nuts

1 Red Onion Cut Into Thin Rings

Juice of 1 Lemon

1/4 Cup Extra Virgin Olive Oil

Crushed Garlic (As Desired)

Sea Salt, Cayenne to Taste

Mix all ingredients, set in fridge overnight! Enjoy!
