Recipe of the Week: Kohlrabi Siam Chopped Salad

Along with summer comes heatwaves.  The last thing you want to do when the temps peak is be stuck in the kitchen over the stove.  That’s why we love meals like this which are simple, healthy, delicious and don’t require using any heated cooking elements!

Our Kohlrabi Siam Chopped Salad is a beautiful, colorful, blend of healthy cruciferous veggies that give your body a boost of anti carcinogenic goodness, along with antioxidants, and a bevy of vitamins.  This salad is sure to be a crowd pleaser at any outdoor potluck or picnic and is also perfect for a quick meal at home. Refreshing, delectable and healthy….that’s what we call the perfect summer meal!

KOHLRABI SIAM CHOPPED SALAD

4 Kohlrabi, About 2 to 2 ½”Diameter

3 Green Onions, Chopped

1/4 lb. Snow Peas, Chopped

1 ½ Cups Napa Cabbage, Chopped

½ Red Bell Pepper, Cut into Fine Julienne About 1”(2.5

  1. cm) in Length

½ to 1 Fresh Pasilla Pepper, Diced or 1/8 T. Crushed Red Pepper Flakes

1 or 2 Cloves of Garlic, Finely Minced

½”Piece Ginger, Peel and Grated

3 Tbs. Extra‐Virgin Olive Oil

2 Tsp. Sesame Oil

Juice of ½ Lemon

Dash of Rice Vinegar

Salt and Freshly Ground Pepper to Taste

1 Tbs. Minced Green Onions

Combine all ingredients except green onions in a large bowl and toss well to distribute flavors. Garnish

top with minced green onions. Best if made several hours ahead to allow dressing to penetrate the

vegetables.

Serve as a salad course or a side dish. Serves 4.
