Recipe of the Week:  Healthy Homemade Pasta Sauce

One of the most popular dishes loved by people of all ages is a nice bowl of pasta.  With so many healthy alternatives you can use for noodles, it’s important to consider how good your sauce is for you as well.  Unfortunately, many canned sauces are full of sugar and preservatives cancelling out any of the health benefits they could have.  Tomato based sauces that are made without added sugars and chemicals are not only delicious but deliver a substantial dose of lycopene. Lycopene is a powerful antioxidant that can repair damage caused by free radicals as well as protect our immune systems from a variety of illnesses.

Here is one of our favorite and very healthful recipes for a pasta sauce that your body and tastebuds will love!

-3 lbs plum tomatoes

-1 large onion

-3 cloves of garlic

-2 carrots

-1/2 teaspoon dried thyme

-1/2 teaspoon dried basil

-2 ½ tablespoons olive oil

-salt and pepper to taste

Preheat oven to 400 degrees. Core the tomatoes and cut them in half.   Lay them on a baking sheet then add chopped onion, cubed carrots, garlic, basil, and thyme.   Add olive oil, salt, and pepper to the veggie mixture and distribute everything evenly on the baking sheet.  Cook for about an hour or until carrots are tender.  Once finished cooking in the oven, remove baking sheet and carefully peel off tomato skins and discard them.  Transfer everything else into a blender and blend until slightly chunky.  Serve immediately or let it cool for later use.
