08 Nov Recipe of the Week: Avocado & Cilantro Salad
Summer is not quite over, and avocado season is still blessing us with its presence. To make the most of this beneficial and delicious fruit, we’ve decided to share one of our favorite recipes. Not only does it contain heart healthy avocado, but also cilantro which is full of phytonutrients and flavonoids. Simple to make, and absolutely delicious this is a dish that you’ll want to make over and over again. Being healthy never tasted so good!
-1 small can of corn (drained)
-1 small can of black beans (drained)
-1 jalapeno pepper, chopped
-1 red bell pepper, chopped
-5 tbsp. fresh cilantro, chopped
-1 tbsp. garlic, chopped
-2 cups baby spinach, finely chopped
-2 medium avocadoes, cubed
-dash of lime juice
-3 tbsp. olive oil
-sprinkle with Pink Himalayan Salt and black pepper to taste (optional)
Combine corn, black beans, jalapeno and red pepper in a large bowl. Stir in cilantro and garlic. Add spinach and avocado. Toss with lime juice and olive oil. Add salt and pepper if desired. Serve.
